finally the pasta recipe

These last few weeks have consisted of a much more busy than normal pace, long walks/ rides/ deep conversations at the same time, and as expected, work. I dropped the laptop off down at the apple store, at the same time as getting a few shirts. Which is nice, because I have lately been lacking in work shirts, due to me being tall, and shirts shrinking.

I had another really great lunch today with a friend. It was pasta, Pasta Fresca. and this time I used Spaghetti Rigati, which is similar to Spaghetti but has little indented lines that run the length of the pasta, which does a very good job of locking in flavor. It really makes a difference and I think I like it more than Linguine. Thats the same with kosher salt and sea salt.

Here is the recipe (its kinda vague, but thats because it depends on how many people your feeding plus its more fun to experiment) :
  • pasta
  • tomatoes
  • fresh basil, parsley, tarragon (in that order of amount)
  • olive oil(try to get something nice although it isnt necessary. Just make sure it isnt like "light" or something weird like that but pure, or extra virgin, olive oil. )
  • garlic, not alot. if you put too much it will be way too strong.
  • a tiny pinch of rosemary.
  • kosher salt or sea salt(dont use table salt), various types of pepper in a pepper grinder and dont use powerish pepper!
  • butter, Not margarin!!

Step 1: get water in a big pot. (depending on how much pasta you make, a big one might not be necessary) Put a little less than a palm full of salt in there. (it looks like alot but its a good amount) do the other steps while you let it boil.

Step 2: get all of your herbs and tomatoes together and chop them up and put them in a bowl. But remember that you want more basil than the other herbs and the least tarragon.
then mix them up.

Step 3: get your garlic(that you chop up) and a pinch of rosemary and put them in a small coffee cup and pour a good amount of olive oil that covers the bottem of the cup.

Step 4: By this time the water may be boiling, so put the pasta in the water and put your coffee cup of garlic and stuff in the microwave for 10 seconds, take it out, and pour it in the bowl of herbs and tomatoes.

Step 5: stir the pasta every once in a while and taste it untill its ready, when its ready, take a SMALL half cup full of the boiling water and put it in the bowl of herbs and stuff. then pour the pasta in the strainer in your sink, put the pasta back in the pot(that you just emptied) and pour in the bowl of herbs and stuff and mix it all together.

Step 6: put a good amount of butter in the pot, add olive oil to taste(meaning dont put a crapload of it in there) and eat it!

yeah. its quite delightful and super easy. So stop eating out and start cooking! You'll Save money.
